Chicken Parmesan

INGREDIENTS

  • 6 chicken breasts, boned and skinned (about 3 lbs)
  • 4 Tablespoons Grandad’s Gravy Extra Virgin Olive Oil
  • 1 Tablespoon butter
  • ½ cup plain bread crumbs
  • ¼ cup grated parmesan cheese
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground pepper
  • 2 eggs
  • 2 jars Grandad’s Gravy Mauro's Original Pasta Sauce
  • 8 oz shredded low-moisture part-skim mozzarella cheese (2 cups)
  • 1 pound thin spaghetti

 

DIRECTIONS

Preheat oven to 350 degrees. Mix bread crumbs, parmesan cheese, salt & pepper in a bowl. Beat eggs in another bowl.

Heat olive oil and butter in large frying pan on medium heat – be careful not to let the butter brown. Dip chicken in beaten egg, then in the bread crumb/cheese mixture. Brown chicken on both sides – about 3 minutes on each side.

Place the browned chicken in a baking dish. Make a slice in the middle of each chicken breast – be careful not to slice in completely in half. Place 3-4 tablespoons of shredded cheese in each chicken breast. Pour one jar of sauce over chicken breasts. Bake uncovered for about 20 minutes.

Serve with cooked thin spaghetti and jar of heated Grandad’s Gravy pasta sauce. Serves 6.
